The NuMex Joe E Parker chilli is one of the most popular varieties in New Mexico and the wider US; it is an improved version of the New Mexico 6-4, producing longer pods and thicker walls.
The Joe E Parker is considered one of the tastiest NuMex chillies, able to be eaten straight off the plant, but also great for roasting and stuffing. At just 1000 Scoville Heat Units, the Joe E Parker is a mild chilli.
This chilli was named after New Mexico State University Agriculture graduate Mr Joe E. Parker, who evaluated this chilli.
