The Anaheim Chilli is one of America's most popular varieties. The Anaheim is a thick-skinned chilli and is commonly used in cooking, and is best served stuffed or roasted when green; once it ripens to red the Anaheim is usually dried and powdered.
In its green state it is also known as the California green chile and long green pepper; when mature and red, it is also known as California Red Chile and Chile Colorado. It is a mild chilli, measuring in at 500 - 2500 Scoville Heat Units (SHU).
