The Serrano is one of the most popular Mexican chillies. They look like a slender jalapeno, but are much hotter, with the hottest pods measuring in at about 25,000 Scoville Heat Units, and the mildest sitting around 10,000 SHU.
With thick, juicy walls, the Serrano is most commonly consumed raw, in salas; they mature to a vibrant red, but are generally consumed in their green state.
Their heat increases as they mature. Similar in taste to the jalapeno, they're used by those wanting that classic Mexican flavour with a little more punch.
