"Aji" means chile pepper in Spanish, and "amarillo" means yellow - so whilst the name translates to yellow chile peppers, the modern Aji Amarillos mature to a deep orange color.
The Aji Amarillo is a fruity chilli, with hints of mango and passionfruit; it is used widely in South American cuisine. It's been said of this chilli that, "if there were a chile to taste like sunshine, this would be it".
It has thick flesh and measures in at about 50,000 Scoville Heat Units (SHU).
