Almost always used dry, the Arbol chilli retains it's bright red colour even when dry. They are reconstituted and used in soups, stews and salsas.
Bitter in taste with an acidic heat of about 30,000 Scoville Heat Units, these chillies are interchangeable with Thai Birdseye or Cayenne peppers.
Due to their bright colour, they are often also used in decorative Ristras, which are said to bring health and good luck.
Sometimes called the pico de pajaro, meaning bird beak, or cola de rata, meaning rat tail.
