Whole dried Ancho chilli

As part of the Mexican holy trinity of dried peppers, the Ancho is a staple in Mexico's famous Mole sauce.

Ancho chillies are dried Poblanos, and are used widely in traditional Mexican cuisine. They are sweeter than many of the dried Mexican varieties, with cherry and fig undertones.

Relatively mild, mix Ancho chillies with hotter varieties to reach your preferred heat level.
